Breakfast Run – June 2020
FROM THE BREAKFAST RUN TO MCLAREN VALE
So good to get out and meet our MG Car Club friends at McLaren Vale, the first Breakfast Run since February.
I met Jeanie and Haydn Reynolds, new members who own an MGF (courtesy of the Dick Manning collection). For some of us baking has been to the fore in the past few months, so it was no surprise to see baked morning tea.
Barb Harrington shared her chocolate/caramel muffins, the link to the recipe is – www.taste.com.au and then enter Cappuccino cupcakes. I made a jubilee cake (my Auntie Glad’s super easy recipe).
Jeanie asked me to put it into the magazine, so here it is.
Auntie Glad’s Easy Jubilee Cake
1 tablespoon of Butter,
1 cup of mixed fruit
¾ cup of sugar
½ teaspoon of mixed spice
¾ cup of boiling water
2 cups of SR flour
Put the first 4 ingredients in a bowl and add the boiling water and allow to cool.
Add the egg and 2 cups of SR Flour
Place into a loaf pan, lined with baking paper and bake at 160 degrees, fan forced for approx 45 mins.
Allow to cool and top with a thin Vanilla butter icing. Can be served buttered.
